Stuffed Manicotti
ingredients
- 1/2 pound ground sirloin
- 1/2 pound ground italian sausage
- 1 pkg frozen spinach, thawed and drained
- 1 12 oz container manicotti, cooked as per directions
- 1 12 oz container whole milk ricotta cheese
- 1/2 cup fresh grated parmesean
- 1 and 1/2 cup mozzarella cheese, or italian blend cheese; separated
- 1 egg
- salt and pepper
- cooking spray
- 1 28 oz can tomato sauce
- 1/2 cup water
- 1 small can tomato paste
- 1 tbsp oregano
- 1 tbsp basil
- 2 garlic cloves, pressed or chopped finely
- 1 tbsp onion powder
- 1 tsp olive oil

Pre-heat oven to 375 degrees. Heat olive oil over medium heat; add garlic, cook until fragrant. Add ground sirloin and ground sausage, cooking until slightly done. Stir until meat browns. Remove to separate bowl. Add tomato sauce, paste, water, and add oregano, basil, onion powder, a dash of salt and pepper and stir. When slightly bubbling, reduce to medium-low; cover, cook for 15-20 minutes.

In mixing bowl combine ricotta, parm, salt and pepper to taste, one egg, 1/2 cup mozzarella. When meat mixture is done, remove from stove. Mix meat mixture with cheese mixture. In 9X11 glass baking pan, fill manicotti noodles with filling; layer and spoon sauce over pasta. Sprinkle with the rest of cheese. Bake for 30 minutes or until bubbling.
