Zucchini Souffle
ingredients
- 1 1/2 pounds fresh zucchini
- 1/8 cup olive oil
- 1 clove garlic
- 1/2 cup fresh parsley, chopped
- 3/4 pound sharp Cracker Barrel cheddar cheese
- 3 eggs, separated
- salt and pepper to taste
directions

1. Steam zucchini until tender, drain.

2. Saute garlic and parsley in olive oil.

3. Grate cheese.

4. Slightly beat egg yolks and firmly beat egg whites.

5. Add all ingredients, except egg whites and a little cheese, to zucchini, plus salt and pepper.

6. Fold in egg whites, and sprinkle part of cheese on top.

7. Bake in buttered casserole dish at 325 degrees for 1 hour and 15 minutes, over a pan of water.
