Chicken Quesadillias
Easy to make and very filling.
ingredients
- 1 1/2 cups cooked cut up chicken
- Shredded mozzerella cheese
- Shredded cheddar cheese
- Medium size tortillias
- Salt and pepper
- Cajun seasoning
- Shredded lettuce
- Sour cream
- Fresh salsa

Sprinkle the cajun seasoning on the chicken and rub it around.

Fill one half of a tortillia with both cheeses, chicken and S&P. Fold over the tortillia and cook in a nonstick skillet over medium heat. Place a heavy bowl or cup on top to keep it folded over. Cook until brown and crispy. Flip over and repeat.

Cut into wedges and serve with the lettuce, sour cream and salsa.
notes
Serve with Lipton (Knorr) spanish rice for a complete meal.
