Cancun Chicken Salad
ingredients
- 2 cups chopped cooked chicken breast
- 1/4 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1/4 cup sliced ripe black olives
- 1 cup canned black beans, drained
- 1 cup (4 oz.) shredded sharp cheddar cheese
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 teaspoons fresh lime juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 chopped fresh cilantro
directions
Combine first 6 ingredients in a large bowl. Combine mayonnaise and next 5 ingredients; add to chicken mixture, stirring well. Chill thoroughly. Great with croissants!
