Shrimp Pesty
ingredients
- 1 pound raw shrimp
- 1 pound can of tomatoes
- 1/2 cup olive oil
- Juice and zest from 2 lemons
- 1 clove of garlic, crushed
- Pepper
- 1 bunch of parsley, finely chopped
- Uncle Ben’s regular rice
directions

Heat the garlic in the olive oil until lightly cooked.

Add the zest and lemon juice. Drain and chop the tomatoes then add. Cook for 5 minutes.

Add the peeled raw shrimp and cook until they are white – a few minutes.

Cook the rice according to the box’s instructions. Fluff it with a fork.

Add your chopped parsley.

Place rice on the plate and spoon these nice shrimp and tomatoes on top.
