Ma Heiber's Famous Banana Cake

Passed down from my good friend Victoria’s grandmother.

ingredients

  • 2/3 c. margarine
  • 1 1/2 c. sugar (1/2 brown, 1/2 white)
  • 2 eggs
  • 1 c. (+) mashed very ripe bananas (from freezer OK)
  • 1 T. sour cream or sour milk (add a drop of lemon juice)
  • 2 c. flour (or 1 1/2 c. flour + 1/4 c. wheat germ, 1/4 c. oat bran)
  • 1 t. baking soda (v. imp.!)
  • 1/2 c. chopped nuts + raisins (optional)
  • 1 bag (12 oz.) choc. chips (not optional)

directions

    Cream margarine, add sugar, eggs. Beat well. Add bananas, dry ingredients, milk, etc. Add choc. chips last.

    Bake at 350, 9x13 pan, ~35 minutes or until brown on top. Sprinkle with powdered sugar (opt.).

This is a wonderful way to use up extra bananas!
