Jamaican Jerk Rub
For grilled chicken wings (and other things)
ingredients
- 1/2 C. fresh cilantro
- 2 to 3 inches ginger
- 2 T. light brown sugar
- 1/2 medium onion
- 2 to 4 cloves garlic
- 1 T. salt
- 2 tsp. (smoked) paprika
- 2 tsp. coarsely ground pepper
- 2 tsp. Herbes de Provence
- 1 tsp. ground cinnamon
- 1 tsp. ground allspice
- 1 tsp. ground cloves
- 1 tsp. ancho chile powder
- 1 tsp. Chinese 5-spice powder
- Juice of 2 limes
- Olive oil

Wash and dry chicken wings.

Combine all fresh ingredients in food processor and blend to fine paste.

Drizzle a bit of olive oil over chicken wings. Add paste from above and dry ingredients. Rub with abandon all over chicken.

Cover with plastic wrap and let sit until ready to grill, at least 1 hour.
notes
Substitute 2T ground coriander, 2T ground ginger, 1T onion powder, and 1T garlic powder for convenience and shelf-life (keeps well for months at room temp. in jar with tight lid).
