Thai Red Curry Beef

- 2 1/2 lbs. lean stewing beef, such as chuck or round, cut into 1 1/2-inch chunks
- Salt and freshly ground pepper
- 3 T. canola oil
- 1 yellow onion, finely chopped
- 4 cloves garlic, minced
- 1/4 c. Thai red curry paste
- 2 cans (13 1/2fluid ounces each) unsweetened coconut milk
- 2 T. Thai or Vietnamese fish sauce
- 2 T. fresh lime juice
- 2 T. packed dark brown sugar
- 2 cans (8 ounces each) sliced bamboo shoots, drained
- 3 T. chopped fresh mint
