Marinated Pork Roast
Must be started a day ahead.
ingredients
- 1/2 c. soy sauce
- 1 t. ginger
- 1/2 c. dry sherry
- 1 t. thyme
- 2 cloves garlic
- 1 T. dry mustard
- 1/4 - 1/2 of a pork loin roast (pork tenderloin)
directions

1. Make a marinade of the first six ingredients.

2. Put the tenderloin in a plastic bag and pour the marinade over it. Close the bag and refrigerate overnight.

3. Remove the meat from the marinade.

4. Roast uncovered at 325°F for 2 1/2 hours. Baste occasionally during the last hour of cooking with the reserved marinade.
