Chicken Pesto and Mozzarella Panini
A delicious meal that is quick to throw together.
ingredients
- 2 boneless, skinless chicken breasts
- 4 slices bread
- 1 - 2 Tbs. mayonnaise, optional
- 3 - 4 Tbs. pesto
- 4 oz sliced mozzarella
- 1 large tomato, sliced
- Butter

Brush chicken with olive oil and season with salt and pepper. Grill chicken on medium heat until cooked through (3 - 5 minutes per side). Preheat panini press to medium high heat.

Spread mayonnaise lightly on 4 sides of bread. Spread pesto on top of mayonnaise. Arrange mozzarella on 2 slices of bread. Top with layer of tomato slices. When chicken is done, place on top of tomato slices and then top with remaining bread. Butter outsides of both sandwiches.

Place sandwiches on panini press and close lid. Cook until toasted and cheese is melted, about 2 - 3 minutes.
