Yogurt Lemon Cupcakes
ingredients
- Cupcakes:
- 2 1/4 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 5 tbs unsalted butter
- 1 cup sugar
- 1 large egg
- 2 large egg whites
- 1 tsp vanilla
- 1 cup nonfat yogurt
- Icing:
- 4 tbs unsalted butter
- 2 cups powdered sugar
- 2 tbs fresh lemon juice
- 1 tsp vanilla
- 1/4 tsp salt

Cupcakes: Sift together dry ingredients. In a large bowl, beat butter until creamy. Graddually add sugar and beat on high speed until lightened in colour and texture. Gradually beat in eggs and vanilla. Add flour mixture in 3 parts, alternating with the yogurt. Bake at 350 F for ca. 18 min.

Icing: Melt butter in a saucepan over low heat; remove from heat and add sugar, lemon juice and salt. Cook, stirring ocassionally over low heat for 5 min. Remove from heat and add vanilla. Beat until cool and desired consistency.
