Cashew Chicken
ingredients
CHICKEN- 1 to 2 pounds chicken breasts, cut in chunks
- 1 egg, beaten
- 1/2 cup milk
- flour to coat
- peanut oil
- rice
- cashews
- green onions
- 3 cups water
- 3 Tablespoons cornstarch
- 5 chicken boullion cubes
- 2 Tablespoons sugar
- soy sauce to taste

Combine milk and egg; pour over chicken chunks. Let set for 10 minutes. Remove chicken and toss in flour for 10 minutes to coat. Fry in peanut oil until golden brown.

in saucepan, mix cornstarch in water to dissolve. Heat over medium heat until clear. Add boullion cubes, sugar and soy sauce. Continue cooking over medium heat until thickened.

Serve chicken over rice; top with sauce. Garnish with green onions and cashews, as desired.
