Fall Salad with Cranberries and Pecans
My friend Sarah makes this and introduced a few easy shortcuts. In the fall, we sometimes foxhunt in cranberry bogs in Massachusetts. This salad is, to me, the taste of fall in a bite.
ingredients
- 1 bag mixed field greens or baby spinach, washed and dried
- 1/2 cup Praline Pecans (storebought, in the nut area)
- 1 cup dried cranberries
- 1/2 small red onion, sliced thinly
- 1/2 cup bleu cheese, crumbled
- Sliced chicken breast, seasoned and grilled or sauteed in olive oil
- Storebought raspberry vinaigrette to drizzle lightly
directions
Toss all of the ingredients together except the chicken and bleu cheese. Season lightly with salt and pepper. Add the bleu cheese and toss lightly, then serve with sliced chicken on top.
