Dixie Pie

ingredients

  • 1/2 (15 oz) pkg refrigerated pie crust
  • 1 1/2 C chopped pecans
  • 1 C (6 oz) chocolate chips
  • 1/2 C granulated sugar
  • 1/2 C firmly packed brown sugar
  • 1 C dark corn syrup
  • 1/4 C bourbon
  • 4 large eggs
  • 2 tsp cornmeal
  • 1/2 tsp salt
  • 1/2 C butter, melted
  • 2 tsp vanilla

    Form pie crust into a 9-inch pie plate; fold edges under and crimp

    Sprinkle chopped pecans and chocolate chips evenly onto bottom of pie crust; set aside

  • 3

    Combine sugars, corn syrup and bourbon in a large saucepan; bring to boil over medium heat

  • 4

    Cook 3 minutes, stirring constantly

    Whisk together eggs and remaining ingredients

  • 6

    Gradually stir about 1/4 hot mixture into egg mixture until all is combined

    Pour filling into crust

  • 8

    Bake in preheated 325° oven for 55 minutes; cool completely

notes

Stir the hot mixture into the egg mixture slowly to allow the two to become the same temperature slowly. Going too fast will cause the eggs to cook.
