Cheesy Scalloped Potatoes

Makes 6-8 servings

ingredients

  • 2lbs. potatoes peeled
  • 1tsp. salt
  • 1/2 c. crisply fried crumbled bacon
  • 1/4 tsp. pepper
  • 1/4 c. sliced green onions
  • 1/4 tsp. celery seed
  • 3 Tbsp. butter or margarine
  • 1 1/2 cups milk
  • 3 Tbsp. flour
  • 1 c. shredded sharp cheddar cheese

directions

Cut potatoes into slices about one-fourth inch thick. Place potatoes in boiling water to cover. Cook at a rolling boil five minutes. Drain potatoes. Layer potatoes, bacon and onion in a greased shallow casserole, 2 qt. size. Melt butter in a medium pan over moderate heat. Add flour, salt, pepper and celery seed. Cook over moderate heat a few minutes, stirring. Gradually add milk. Cook over moderate heat, stirring until thickened. Add cheese. Stir until cheese melts. Remove from heat. Pour over layers. Bake covered in oven, preheated to 350 degrees for 30 minutes. Uncover and bake about 20 minutes longer or until potatoes are done.
