Simple Paella

ingredients

  • 2 Tb. olive oil
  • 4 chicken drumsticks and thighs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic
  • 1/2 lb. andouille sausage, 1/4 in. thick
  • 1 cup uncooked white rice
  • 3 cups low sodium chicken broth
  • 1 package Goya Sazon seasoning with Azafran (saffron)
  • 2 bay leaves
  • 12 medium shrimp, peeled
  • 1 cup frozen peas
  • 1 Tb. parsley

    Heat oven to 375.

  • 2

    Sprinkle chicken with salt and pepper. Heat oil in large dutch oven. Brown chicken in oil for 5 minutes, turning halfway through. Reduce heat to medium and add garlic and sausage. Cook 1 minute, stirring constantly.

    Add rice and stir to coat with oil, Stir in broth, Sazon and bay leaves, bring to a boil. Return chicken to bot and bake, uncovered, for 45 minutes stirring once halfway through.

    Remove from oven and tuck shrimp under rice mixture. Sprinkly peas on top and cover. Return to oven and bake for another 15 minutes. Sprinkle with parsley and serve immediately

You can add other shellfish with the shrimp to amp up the seafood.
