Veggies and Peaunt Sauce
This is another go-to weeknight recipe in our house. Just dump whatever veggies are around into a steamer and slather on the peaunt sauce. Oh yum.
ingredients
- Veggies (sweet potato, kale, snow peas, peppers, broccoli, etc.)
- Firm tofu
- Brown rice
- Peanut butter (preferable natural. Chunky or smooth)
- Hoisin sauce
- Water for thinning
- Fresh ginger, grated
- Hot sauce (preferably sriracha)
- Soy sauce
directions
Put rice up to cook according to directions. Cut veggies into bite-sized pieces and steam until done 10-20 minutes(harder ones like sweet potato and broccoli take longer than snow peas and kale. Meanwhile make peanut sauce: mix equal parts peanut butter and hoisin. Add grated ginger, hot sauce, and soy sauce to taste. This whole thing works best if you taste several times as you go along. We like lots of ginger and a dash of soy. Sauce will be super thick. Add water a few Tbsp at a time mixing after each addition. I like to keep the sauce thick and creamy, more like a dipping sauce. Gabe likes it thinner poured over the whole mess of rice and veggies. Experiment and enjoy.
