Italian Sausage and Peppers
Simple and flexible recipe for weekday dinner.
ingredients
- 1-1.5 lbs Italian sausage (hot or mild)
- 2 T olive oil
- 1 sweet onions
- 2 bell peppers - green and red
- 2-3 cloves of garlic
- salt, pepper, and oregano to taste
- basil (if desired)
- 1 can San Marzano canned tomatoes
directions
Saute veggies in olive oil for 5-10 minutes. Stir in Italian sausage and cook over medium heat to brown lightly. Add tomatoes and their juice, cover partially and reduce to a simmer. Cook, stirring occasionally until sausages are done, 10-15 minutes, seasoning to taste with salt, pepper, and oregano and add water and/or red wine if needed. Serve with crusty loaf of bread and red wine. May also serve over linguine or other pasta.
