Grandma Dawson's Potato/Mac Salad

ingredients

Base
  • 4 cups cooked potatoes cubed or 1 -1 pound box of Elbow Macaroni cooked.
  • 2 hard boiled eggs, chopped
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped green pepper
  • 1/2 cup thinly sliced celery
Dressing
  • 1/2 cup vinegar (dill pickle juice works well)
  • 2 eggs beaten
  • 1 teaspoon prepared mustard
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 cup Miracle Whip
  • 1 teaspoon salt
  • dash pepper

Base

In a large serving bowl mix together potatoes or elbow macaroni, chopped boiled eggs, copped onion, chopped green pepper and sliced celery.

Dressing

  • 1

    Mix vinegar or dill pickle juice, eggs, mustard, sugar, water, water, Miracle Whip, salt and pepper in a small sauce pan. Cook on medium heat, stirring constantly until thick and bubbly. Pour over Salad Base and stir well.

    Sprinkle celery seed on top if desire.
