Mommy's Oriental Chicken Breasts!
ingredients
Oriental Marinade:- 3 cloves garlic, minced
- 1 slice ginger, about 2 tsp. minced
- 1/4 cup lemon juice
- 2 tbsp. brown sugar, packed
- Freshly ground pepper
- 1/4 cup soy or tamari sauce
- 1 tsp. Oriental sesame oil
- 5 or 6 drops tabasco sauce, optional
- 6 boneless, skinless chicken breasts, trimmed of fat
- 1 tbsp. cornstarch
- 1/2 cup chicken broth, room temperature
- 1 red pepper, chopped
- 4 green onions, chopped

1) Combine marinade ingredients in a bowl. Marinate chicken for 30 minutes at room temperature, or over and marinate up to 48 hours in refrigerator, turning chicken over occasionally

2) Preheat oven to 400°F. Spray a 10“ x 15” x 1" baking sheet with nonstick spray. Remove chicken from bowl, reserving marinade. Arrange chicken in a single layer on baking sheet. Bake uncovered at 400°F for 20 minutes. Reserve any cooking juices from chicken

3) Meanwhile, in a small saucepan, dissolve cornstarch in chicken broth. Stir in reserved marinade. Add red pepper and green onions. Cook on medium heat until thickened and bubbling, stirring once or twice. (Or microwave for 2 to 3 minutes on high) Stir in cooking juices from chicken and boil 1 minute longer

4) Arrange chicken on a serving platter; top with sauce
