Simply Delicious Strawberry Cake

Makes 1 9 inch round cake

This cake screams summertime! It is so moist and perfect for cookouts and celebrations.

ingredients

Cake
  • 1 box white cake mix
  • 1 3 oz box strawberry gelatin
  • 1 (10oz) package frozen strawberries in syrup, thawed and pureed
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
Strawberry Cream Cheese Frosting
  • 1/4 cup butter, softened
  • 8 oz cream cheese, softened
  • 1/4 cup frozen strawberries, thawed and pureed
  • 1/2 tsp strawberry extract
  • 7 cup powdered sugar

    Preheat oven to 350. Lightly grease 2 round 9 inch sq cake pans.

    In large bowl combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed until smooth. Pour into prepared pans and bake for 20-25 minutes until toothpick comes out clean. Cool in pan for 10 minutes. remove from pans and cool completely. Spread frosting between layers and on sides of cake. Garnish with Fresh strawberries around the side and on top if desired.

Frosting

In large bowl beat butter and cream cheese until smooth. Beat in Strawberry puree and extract. Gradually add sugar until smooth.

notes

I buy a 16 oz strawberries use 10 oz for the cake and 1/4 cup for frosting. You can also make this cake using a 9x13 pan.
