Grilled Pork Chops with Apple Chutney
ingredients
- 3 TSP vegetable oil
- 1 medium red bell pepper, diced
- 1/2 small onion, diced
- 2 TSP fresh ginger
- 2 medium garlic cloves
- 1 c. apple cider vinegar
- 1 c. packed light brown sugar
- 1 TSP mustard seeds
- 1/2 tsp allspice
- 1/8 tsp cayenne pepper
- 3 granny smith apples; peeled, cored and cut into 1/2 in. dices

For the chutney:

While the pork chops are grilling, heat 1 TSP oil in a medium saucepan over medium heat. Add the bell pepper, onion, ginger and garlic. Cover, reduce heat to medium and cook until vegetables have softened, about 5 minutes. Stir in the vinegar, brown sugar, mustard seeds, allspice, cayenne pepper and bring to a simmer. Cook while maintaining a simmer until mixture is thick and syrupy. Remove from heat.

Heat 1 TSP oil of medium heat. Add apples and cook, stirring frequently, until golden brown on all sides. Add to the onion/pepper mixture and toss the chutney gently to combine.

Serve with the pork chops.
