Basil Pesto
Pesto has been used for decades in Europe to enhance appetizers or to dress pasta. It is essential to use the freshest ingredients. I began to make my own pesto many years ago after my mother had given me a Chia Herb Garden. I grew the basil from seeds. I actually go through withdrawal when I don’t have a pot growing on the patio!
ingredients
- 1 cup fresh parsley
- 2 cups of fresh basil
- 1/4 cup of olive oil
- 3 cloves of garlic
- 2 tbs. of lemon juice
- 2 tbs. of grated Parmesan
- 2 oz. of pine nuts
directions

Wash and drain parsley and basil and place in food processor with blade attachment. Add lemon juice, cheese,and garlic and pulse a few times.

Dry roast pine nuts and add to processor. Continue to pulse while adding the olive oil until a smooth paste has formed.

Serve pesto with fresh tomato slices, provolone or mozzarella cheese and crusty baguette toast or use to dress your favorite pasta..
