Fruit Cocktail Cake

One of our favorite cakes and so easy to make!


  • Cake:
  • 2 c. flour
  • 1 1/2 c. sugar
  • pinch of salt
  • 2 t. baking soda
  • 2 beaten eggs
  • 1 #303 can fruit cocktail
  • 1/2 c. brown sugar
  • 1/2 c. coconut
  • 1 t. vanilla
  • Icing:
  • 1/2 c. canned milk
  • 1 stick margarine
  • 1 c. sugar
  • 1 c. coconut
  • 1 t. vanilla
  • 1/2 c. pecans

    Mix flour, sugar, salt, and baking soda. Add eggs and fruit cocktail. Pour into long pan. Mix brown sugar, coconut and vanilla. Crumble on top of cake.

    Bake at 350° till done.

    Mix milk, margarine and sugar together. Boil for 2 min. Add coconut and vanilla. Pour on hot cake
