The Rocks Chicken Balti
Very easy. We cook it all the time and goes best with a good pilau rice and nann
ingredients
- 2 tblsp balti spice mix (or curry paste but balti is much better)
- 1 tsp tumeric
- 1 tsp paprika
- 4 skinless chicken breasts, cut into strips
- 1 tbsp peanut or corn oil
- 2 garlic gloves, crushed
- 100ml chicken stock (or water if you have none, but stock adds extra flavour)
- 2 red onions, sliced
- 1/2 - 1 tsp dried crushed red chillies
- 8 or as many as you like chopped cherry tomatoes
- 200ml canned coconut milk
- squeeze of fresh lime or lemon
- Herb leaves to garnish

Combine the spice mix, tumeric and paprika, then rub over chicken to coat

Heat the oil in a large pan until hot. Add the garlic, then the chicken and cook for 2 mins, turning often.

Add the water, onions, chillies, and tomatoes, then simmer for 7-8 mins until chicken is cooked.

Add coconut milk and simmer for further 3 mins.

Meanwhile cook the rice and nann.

Add the lime or lemon juice as desired and garnish when serving.
