Very easy. We cook it all the time and goes best with a good pilau rice and nann

ingredients

  • 2 tblsp balti spice mix (or curry paste but balti is much better)
  • 1 tsp tumeric
  • 1 tsp paprika
  • 4 skinless chicken breasts, cut into strips
  • 1 tbsp peanut or corn oil
  • 2 garlic gloves, crushed
  • 100ml chicken stock (or water if you have none, but stock adds extra flavour)
  • 2 red onions, sliced
  • 1/2 - 1 tsp dried crushed red chillies
  • 8 or as many as you like chopped cherry tomatoes
  • 200ml canned coconut milk
  • squeeze of fresh lime or lemon
  • Herb leaves to garnish

directions

    Combine the spice mix, tumeric and paprika, then rub over chicken to coat

  • 2

    Heat the oil in a large pan until hot. Add the garlic, then the chicken and cook for 2 mins, turning often.

    Add the water, onions, chillies, and tomatoes, then simmer for 7-8 mins until chicken is cooked.

    Add coconut milk and simmer for further 3 mins.

    Meanwhile cook the rice and nann.

  • 6

    Add the lime or lemon juice as desired and garnish when serving.
