Date Squares
Mom’s famous date squares are a holiday tradition for our family and we enjoy them every year. I’d rate them better than most, especially if you enjoy dates.
ingredients
Top and Bottom Crust:- 1 cup brown sugar
- 1 cup shortening
- 2 cups flour
- 2 cups oatmeal
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp cream of tartar
- 2 cups dates
- 1/2 cup brown sugar
- 1 cup water
- 1 tsp lemon juice

Prepare Filling:

Cut up dates and mix with other filling ingredients in a sauce pan. Bring to boil and simmer until dates are soft and filling thickens. Take off heat and let cool.

Prepare Crust:

cream brown sugar and shortening with electric mixer.

Sift together flour, salt, baking soda and cream of tartar and add to sugar mixture, then add oatmeal and mix together until well blended.

Put together:

Place half of crust mixture on bottom of 9“ X 11” pan. Press down firmly.

Pour date filling on top of crust and spread evenly.

Cover filling with remaining crust mixture and pat down lightly.

Bake at 350 until crust is golden brown. Let cool and cut into 2 inch squares.
