Cashew Chicken
The delicious chicken that was not made enough.
ingredients
- Marinade: 1 Tbsp soy sauce 1/2 tsp sugar
- 1 Tbsp vegetable oil 1 tsp cooking sherry (MATT!!)
- 1 Tbsp corn starch 1 tsp shredded ginger root (opt.)
- 1 tsp salt 1 lb. Sliced beef or chicken
- (Mix thoroughly and let stand for 20 minutes at room temperature--ready for cooking in the wok)
- Mixture: Meat prepared as above
- 1/2 lb mushrooms, sliced
- 5-6 celery stalks, chopped
- 2 medium onions, chopped
- 2 pkgs. (1 1/8 oz) dry roasted cashews
- 8 Tbsp oil, divided
- 3 tsp salt, divided
directions
Heat wok (or pan) and add 2 Tbsp oil. Fry chicken until done (golden brown). Remove from wok & add 2 more Tbsp oil. Stir-fry celery until tender-crisp, adding 1 tsp salt. Remove from wok & repeat process with onions and mushrooms. Add all ingredients and toss together in wok. Mix and serve--can be served over rice.
