Pumpkin Pie Cake
ingredients
- For base:
- 1 package yellow cake mix; reserve 1 cup for topping
- 1/2 cup melted butter (one stick)
- 1 egg
- For filling:
- 1 can pumpkin – 10 oz
- 2 eggs
- 2/3 can Eagle Brand Milk
- For topping:
- 1 cup reserved cake mix
- 1/4 cup sugar
- 1 tsp cinnamon
- 1/4 cup butter – not melted

Preheat oven to 350°.

Spray 13x9 pan with nonstick cooking spray.

For base: Mix yellow cake mix, butter and egg by hand until moist. Press firmly into bottom of pan.

For filling: Mix pumpkin, eggs and Eagle Brand milk. Pour filling over base.

For topping: Mix reserved cake mix, sugar, cinnamon and butter. It should be crumbly. Sprinkle over filling. This should cover the whole pan.

Bake for 35 to 45 minutes.

Cover with lid immediately after removing from oven – this helps cake stay moist.
