Southern Style Corn Souffle – by Will Ford
ingredients
- 1 cup onion, chopped
- 4 TB butter
- 3 large eggs, slightly beaten
- 2 cups half and half
- 1 pkg. (28 oz) frozen sweet corn
- 1 can (14.75 oz) cream style corn
- 1 sleeve saltine crackers, crushed
- 1 1/2 cups shredded Swiss cheese
- 1 1/2 tsp. ground black pepper
- 1 tsp. salt

Preheat oven to 350. Place butter in a small skillet over medium heat. Add onion and sauté until softened (6-8 mins). In a medium bowl, lightly beat eggs and add half and half, salt and pepper. In a large bowl, combine frozen corn and cream style corn. Add liquid mixture and onions; stir to combine. Add crackers and cheese and stir just until combined.

Place in casserole dish and bake 75-90 minutes, until golden brown and puffy. Remove from oven and allow to cool 10 minutes before serving.
