Potato Pancakes
ingredients
- 3 Russet Potato’s
- 1 Med Onion
- 2 Eggs
- 2 Tbs Flour
- 3/4 Tsp Salt
- dash of pepper
- Canola Oil (for frying)

1) Wash and peel potatoes. Grate potatoes on coarse grater into large bowl filled with ice water.

3) Let stand 15 min

4) Grate onion: measure 1/4 cup.

5) In med. bowl, beat eggs with wire whisk.

6) Add grated onion, flour, salt,pepper, mix well.

7) Drain potatoes: pat dry with clean dish towel or paper towels.

8) Measure about 4 cups of the potatoes and add to egg mixture, mix well.

9) In lg heavy skillet, slowly heat oil, 1/8 in deep, until very hot but not smoking.

10) For ea pancake drop 1/4 cup of potato mixture into hot oil. Do not crowd in skillet (Make 2-3 at a time).

12) With spatula, flatten against bottom of skillet to make ea pancake about 4in in diameter.

13) Fry 2-3 min on ea side or until golden brown and crisp. Drain well on paper towels.

Serve hot with sour cream or applesauce.
