Green Beans with Basil and Mint
ingredients
- 6 cups water
- 1 pounds green beans, trimmed
- 2 cloves garlic, chopped
- 1/2 cup shredded fresh basil
- 1/3 cup shredded fresh mint
- 1 small red sweet pepper, chopped
- 2 tablespoons olive oil
- 1/2 teaspoon salt

1. In a 4 quart Dutch oven bring water to boiling. Add green beans and return to boiling; reduce heat. Simmer, uncovered for 7 to 8 minutes or until beans are crisp-tender, adding garlic the last minute of cooking. Drain.

2. Meanwhile, in large bowl combine basil, mint, sweet pepper,olive oil, and salt. (Can be prepared ahead to this point. Just before serving, slightly reheat green beans and garlic, add above ingredients.) Add drained green beans and garlic. Toss gently to combine.
