Wheatberry Salad with Apples, Gouda Cheese, Pecans, Dried Apricots & Cherries
Really good!
ingredients
- 1 c. wheatberries or barley (hard)
- 1/4 t. salt
- 1/2 c. diced green apple or pear (tossed with 1 T. lemon juice)
- 2/3 c. pecans, toasted, chopped coarsely
- 2/3 c. diced Gouda cheese
- 1/2 c. dried cherries
- 1/2 c. dried cranberries
- 1/2 c. dried chopped Cali apricots
- 1/2 c. minced celery
- 3 T. minced parsley
- Red Onion Cranberry Dressing:
- 1/2 c. vegetable oil
- 1/2 c. cranberry juice
- 6 T. raspberry vinegar
- 2 T. balsamic vinegar
- 1 T. Dijon mustard
- 1/2 c. minced red onion
- 2 T. sugar
- salt & pepper to taste

Cook wheatberries in boiling salted water until tender, but not soft-about 1 hour. Drain and cool. For dressing, blend all ingredients in blender. Stir in red onion.

To assemble mix wheatberries with rest of ingredients for salad.
