Lettuce and English Peas Salad
Recipe from Melissa Hoffman...this recipe was given to me from your Mom and was made for Dad’s 60th birthday in 2001.
ingredients
For the Dressing- 1/4 cup veg. oil or olive oil
- 3 TB red wine vinegar
- 3 TB fresh parsley, minced
- 1 1/2 TB sugar
- 1/2 tsp salt
- 1/2 tsp garlic salt
- 1/4 tsp oregano
- 1/8 tsp pepper
- 1/2 head romaine lettuce-torn
- 1/2 head iceberg lettuce-torn
- 2 stalks celery-sliced
- 2 green onions-sliced
- 1 cucumber-sliced
- 1 (10oz) package frozen English peas, thawed
directions
For the Dressing
Combine dressing ingredients in a jar. Cover tightly and shake vigorously. Chill.
For the Salad

Combine romaine and iceberg lettuce and add remaining ingredients in a zip top plastic bag. Cover and chill at least 2 hours.

When ready, combine salad and dressing and toss to serve. Can top with a little cheddar cheese for color.
