whole wheat fococcia
ingredients
- 1 cup boiling water
- 1 cup warm water
- 2 tsp dry yeast
- 1 tbsp honey
- 2 tsp salt
- 1/3 to 1/2 extra virgin olive oil
- 2 1/2 whole wheat flour
- 2 to 3 cup bread flour
directions
put boiling water in s mixing bowl and dissolve honey, about 10 minutes. Add warm water (make sure water is not above 90* or it will kill the yeast. Add the yeast stir to dissolve and let sit another 5 minutes. Stir in the salt and 2 tbsp olive oil. Add the whole whole wheat flour stirring in 1/2 cup at a time until completelt mixed. Add 2 cups of the bread flour in the same way. Add flour until the dough holds together and can be kneaded. Knead for 5 minutes by hand or in a mixer. Form into a ball and put a greased bowl and let rise for 1 1/2 hour or until doubled in size. Line a sheet try with graeased paper and punch dough. Put dough into sheet pan and press down with fingers until it spreads completely on sheet pan. Cover with greased plastic wrap and let rise 30 to 45 minutes. Preheat oven 375* dimple dough and drizzle olive oil and scatter toppings. Bake for 20 -30 minutes until golden brown.
