Carolina Pulled Pork
ingredients
- 1 large onion, chopped rather thickly
- RUB:
- 1 Tbsp. brown sugar
- 1 Tbsp. paprika
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 (2-4 lb.) boneless pork butt or shoulder
- SAUCE:
- 1/2 cup cider vinegar
- 2 tsp. Worcestershire sauce
- 1 tsp. brown sugar (or substitute with honey, molasses, or agave nectar)
- 1/2 tsp. dry mustard
- 1 garlic clove, minced or pressed
- 1/4 tsp. cayenne powder
- 1 tsp. chili powder

1) Place onion in slow cooker. Combine rub ingredients in a small bowl and rub into the pork. Place in slow cooker.

2) In a medium bowl combine sauce ingredients. Whisk together. Pour over the pork and cover with lid.

3) Cook on low for 10 hours or high for 5-6 hours.

4) When finished, shred the pork by hand.
