Carolina Pulled Pork

ingredients

  • 1 large onion, chopped rather thickly
  • RUB:
  • 1 Tbsp. brown sugar
  • 1 Tbsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 (2-4 lb.) boneless pork butt or shoulder
  • SAUCE:
  • 1/2 cup cider vinegar
  • 2 tsp. Worcestershire sauce
  • 1 tsp. brown sugar (or substitute with honey, molasses, or agave nectar)
  • 1/2 tsp. dry mustard
  • 1 garlic clove, minced or pressed
  • 1/4 tsp. cayenne powder
  • 1 tsp. chili powder

  • 1

    1) Place onion in slow cooker. Combine rub ingredients in a small bowl and rub into the pork. Place in slow cooker.

    2) In a medium bowl combine sauce ingredients. Whisk together. Pour over the pork and cover with lid.

    3) Cook on low for 10 hours or high for 5-6 hours.

    4) When finished, shred the pork by hand.
