Easy-Peasy Bean Chili
ingredients
- 1 onion chopped
- 2 Tbs. olive or canola oil
- 1 can cannellini beans w/juice
- 1 can black beans rinsed
- 1 can dark red kidney beans w/juice
- 1 can garbanzo beans w/juice
- 1 package frozen yellow corn
- 1 can diced tomatoes w/juice
- 1 can chicken or vegetable broth (can vary depending on how thick you want it.)
- 1/4 tsp. garlic powder
- 1 tsp. chili powder
- Salt/pepper to taste

Sauté onions in oil until translucent. Add all beans, tomatoes, broth, and seasonings (add more if want spicier).

Cook until all ingredients are hot or is thickness desired.

Can experiment with varieties of beans.

Good with cornbread.
