Peanut Butter Cookies
Mom’s favorite Peanut butter cookie recipe. This is the one we grew up with. Many a holiday we enjoyed these peanut buttery treats, or sometimes just for a surprise snack.
½ cup peanut butter
½ cup brown sugar (firmly packed)
½ cup white sugar
½ cup shortening
1 egg
1½ cup flour
1 tsp baking soda
Cream together peanut butter, brown and white sugar and shortening. Add egg and mix.
Sift together baking soda and flour and add to above ingredients and mix until blended.
Roll into 1 inch balls and place on cookie sheet about 3 inches apart. Press down with fork in criss cross pattern making 2 inch circles.
Bake at 350 for 10 to 12 minutes or until golden brown on edges.
Let cool before removing from cookie sheet.
