Cousin Carl’s Special Latkes
ingredients
- 2 eggs
- 3 cups potatoes (grated, drained, raw potatoes)—about 4 medium whole potatoes
- 4 tablespoons grated onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons matzo meal (or cracker meal)
- 1/2 cup oil (I think he used Wesson vegetable oil)

In medium bowl, beat eggs, then add next five ingredients and mix well. (grated potatoes, grated onion, salt, pepper, matzo meal). Carl was a stickler for draining the raw, grated potatoes thoroughly over a strainer.

In skillet, over medium heat, heat half the oil. Drop potato mixture by tablespoonfuls (approximately 3 tablespoons per pancake—I think he used 2 tablespoons per pancake) and fry until brown. Turn and brown second side. Add more oil as needed. Cool latkes on sheets of paper towels to absorb excess oil, then discard paper towels before serving hot or storing.

Serve hot with applesauce, sour cream or plain.
