Jamaican Chicken Adobo
I used to work with a Sailor from Jamaica named Delroy Robinson. Delroy used to make me his Jamaican chicken adobo when we would have potlucks at work. He gave me this recipe. If you like teriyaki chicken, you will love this.
ingredients
- 1 CHICKEN, CUT UP
- 2 TBLS CRUSHED GARLIC
- 2 BAY LEAVES (CRUSHED)
- 1 CUP SOY SAUCE (LOW SALT WILL WORK WELL)
- 1 CUP WHITE VINEGAR
- 1 TBLS GROUND BLACK PEPPER

PLACE ALL BUT CHICKEN IN POT AND STIR TO COMBINE. ADD CHICKEN. BRING TO BOIL. SIMMER COVERED FOR 15 MINUTES, THEN UNCOVERED FOR ANOTHER 20 MINUTES OR UNTIL CHICKEN IS TENDER.
