Mexican bean and barley soup
This is my take on a recipe I found...you know me I have to tweak everything. It’s even better the next dayë
ingredients
- 4 tablespoons oil
- 3 red potatoes diced
- 2 onions diced
- 2 carrots diced
- 1-2 jalapeño finely diced
- 2 teaspoons cumin
- 1 tablespoon minced garlic
- 2 teaspoons oregano
- 6 cups broth (beef,chic or veggie)
- 2 cups cooked barley
- 2 cans pinto beans
- Lime wedges and cilantro minced.

I like to chop fresh chives and mix with shredded cheese and make corn quesadillas.
