Roasted Chicken Salad

ingredients

  • 2 chicken breasts
  • 1/2 cup mayonnaise
  • juice of 1/2 lemon
  • 1 tsp dijon mustard
  • 1/4 cup pickles, chopped
  • 1 shallot, chopped
  • Salt and Pepper to taste
  • Italian Herb seasoning (like Ms. Dash)
  • Olive oil

    Heat oven to broil on low setting. Place chicken breasts on roasting pan coated with non-stick spray.

    Brush chicken with olive oil to coat. Sprinkle italian seasoning generously over both chicken breasts. Place chicken in oven on broil for 30 minutes, or until lightly brown and done. Let cool. Shred chicken with two forks and place in mixing bowl. In separate bowl, combine mayo, lemon juice, mustard, pickles, and shallot. Mix in shredded chicken. Add salt and pepper to taste. Serve on bread as a sandwich or on top of green salad.
