Stuffed Squash Boats
ingredients
- 3 yellow crookneck squash or zucchini, halved lengthwise
- 3/4 cup red onion, cut into half moons
- 4 1/2 tablespoons grated Parmesan cheese or half Parmesan and half Romano
- 3/4 teaspoon dried basil or thyme
- 4 1/2 tablespoons butter, softened
- salt and white pepper, to taste
