Smoked Salmon & Hummus on Turkish Bread
ingredients
- 2 slices crusty Turkish bread(cut down middle)
- 4 slices smoked salmon
- 2 tablespoons hummus
- 2 small handfuls arugula lettuce
- 1 ripe avocado
- 1 medium ripe tomato
- 1 persian or Japanese cucumber
- chopped fresh chives
- chopped fresh dill
- 2 teaspoons capers
- 2 lemon wedges
- 1 teaspoon olive oil
- salt and pepper to taste

Cut Turkish bread down the middle, so you end up with two nice square pieces(4x4 inches). One per person. Toast bread if you choose.

Spread a thick layer of hummus over each slice of bread.

Add a small handful of arugula to each.

Add several slices of tomato to each.

Add half cucumber (cut into circles) to each.

Layer 2 strips of smoked salmon to each.

Add several slices of avocado to each.

Top with chives, dill sprigs, and capers.

Squeeze a good amount of lemon over entire stack.

Drizzle olive oil over stack.

Salt and pepper to taste.

Serve with lemon wedge.
