Squash and Zucchini Marinade
Great recipe for grilled veggies.
ingredients
- 2 Tbsp White Vinegar
- 2 Tbsp Lemon Juice
- 1 Tbsp minced garlic
- 2 tsp thyme
- pinch of salt and pepper
- 1/3 C Extra Virgin Olive Oil

Place ingredients in large freezer bag.

Slice Zucchini and squash length-wise to 1/4 inch thickness or less for grilling. Otherwise you may slice in circles to place in skillet.

Add slices to the marinade bag and shake until all well coated. Leave in refrigerator for about 4 hours or overnight.

Cook until desired texture. may serve with fresh parmesan on top if desired.
