This recipe came from Lilla Hernandez who’s husband Dave worked at Cross Lumber for many years. Once again, we have a recipe from a good cook who didn’t measure ingredients!

ingredients

  • Fresh chilies
  • jack cheese
  • flour
  • eggs
  • oil

directions

Broil chilies under broiler on all sides. Peel and remove seeds but leave on stem. Make a small slit in side of chili and stuff with jack cheeses. Add salt if you wish. Roll in flour. Beat egg whites until stiff. Add a large pinch of flour and beat into egg whites. Beat egg yolks and fold in. Dip chilies in batter and fry on all sides until brown. Drain on paper towel and serve.
