Spinach-Walnut Stuffed Chicken

ingredients

  • 1/2 C finely chopped onion
  • 1/2 C finely chopped fresh mushrooms
  • 1/4 C finely chopped celery
  • 2 Garlic cloves, minced
  • 2 1/2 tsp Olive oil
  • 1 Pkg.(10oz) frozen chopped spinach thawed and squeezed dry
  • 1/4 C crumbled Gorgonzola cheese
  • 4 Boneless skinless Chicken breast halves(6oz each)
  • 1 Egg
  • 1/4 C ground walnuts

directions

  • 1

    1. In a small skillet, saute onion, mushrooms, celery & garlic in oil until tender. Stir in spinach & cheese; remove from the heat.

    2. Cut lengthwise slit through the thickest part of each chicken breast; fill with spinach mixture. Place egg white & walnuts in separate shallow bowls. Dip on side of chicken in egg white, then in walnuts.

    3. Place in an 11 X 7in baking dish coated with cooking spray. bake uncovered at 350 for 25-30 mine or until chicken juices run clear.
