Spinach-Walnut Stuffed Chicken
ingredients
- 1/2 C finely chopped onion
- 1/2 C finely chopped fresh mushrooms
- 1/4 C finely chopped celery
- 2 Garlic cloves, minced
- 2 1/2 tsp Olive oil
- 1 Pkg.(10oz) frozen chopped spinach thawed and squeezed dry
- 1/4 C crumbled Gorgonzola cheese
- 4 Boneless skinless Chicken breast halves(6oz each)
- 1 Egg
- 1/4 C ground walnuts

1. In a small skillet, saute onion, mushrooms, celery & garlic in oil until tender. Stir in spinach & cheese; remove from the heat.

2. Cut lengthwise slit through the thickest part of each chicken breast; fill with spinach mixture. Place egg white & walnuts in separate shallow bowls. Dip on side of chicken in egg white, then in walnuts.

3. Place in an 11 X 7in baking dish coated with cooking spray. bake uncovered at 350 for 25-30 mine or until chicken juices run clear.
