Cousin Phylis' Apple Caramel Pecan Pie
The power puncher of this delectable delight is the caramel!
ingredients
- 6 cups thinly sliced, peeled cooking apples (approx. 2 1/4 lbs.)
- 1 Tbs. lemon juice (optional)
- 3/4 c. sugar
- 2 Tbs. all-purpose flour
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1 1/2 c. melted caramel (or a 8oz. jar of caramel topping)
- 1 pkg. Pilsbury ready pie-crust

If the apples lack tartness, sprinkle with lemon juice. In a large mixing bowl stir together the sugar, flour cinnamon and nutmeg. Add apple slices and caramel. Toss till apples are fully coated. Set mixture aside.

Place ready-made pie crust in bottom layer of pie plate. Transfer apple mixture into the pie plate and cover with the top layer of ready-made pie crust. Brush top of pie crust with melted butter or an egg wash. Seal and crimp the edges.

Bake in a 375 degree oven for 25 minutes. Cool on a wire rack.
notes
To prevent overbrowning, cover the edge of the pie with foil pieces.
