Marinated Pork Tenderloin
ingredients
- 2 pork tenderloins (3/4 to 1 lb each)
- 2 cups red wine
- 1/3 cup soy sauce
- 1/2 tsp pepper
- 6 to 8 dashes Tabasco sauce
- 1 tsp salt
- 1/2 cup orange juice
- 1/4 cup brown sugar
- 1 Tbsp strong instant coffee
- 1 Tbsp olive oil

Trim any fat & senew from pork. Bring wine to boil & cook 1 minute. Let cool. Mix with all other ingredients & pour over pork in a zip lock bag. Marinate 24 hours.

Remove pork, discard marinade. Rub pork with olive oil and grill or roast in oven to 150-155 degrees. Do not over cook or meat will be dry. Wrap in foil for 10 minutes before slicing.

Tenderloins my also be smoked.
