Triple Drizzle Cheesecake
Evan is an amazing cheesecake maker. And that is part of the reason why I married him! We made cheesecakes a lot while we were dating and this one is by far my all time favorite! It is super rich though. A little slice is all you need!
ingredients
Here’s what you need:- Chocolate Crust:
- 1 1/2 c. crushed vanilla wafers
- 1/2 c. powdered sugar
- 1/4 c. cocoa
- 1/3 c. butter melted
- Filling:
- 3 packages {8 oz each} cream cheese at room temp.
- 3/4 c. sugar
- 3 eggs
- 1/3 c. sour cream
- 3 tblsp. flour
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 c. butterscotch chips
- 1 c. semi-sweet chocolate chips
- 1 c. white chocolate chips
- Tripple Drizzle:
- 1 tblsp. buttersotch, chocolate, and white chips
- 1 1/2 tsp. shortening divided {do not use butter or margerine}

Here’s what you do:

Chocolate Crust:

heat oven to 350. in medium bowl, stir together all ingredients. press mixture onto bottom and one 1/4 inch up the sides of a 9 inch springform pan. bake 8 minutes. cool completely.

Filling:

heat oven to 350. in a large mixer bowl, beat cream cheese and sugar until smooth. add eggs, sour cream, flour, vanilla, and salt; beat until blended. melt the butterscotch chips in a bowl in the microwave. Heat for 1 minute and stir. If necessary continue to heat at 15 second intervals until smooth. stir 1 1/2 c. batter into melted butterscotch chips until smooth. pour into prepared crust. repeat step using chocolate and white chips.

bake 55-60 min. or until almost set in the center. remove from oven to wire rack. with knife loosen cake from side of pan.

Triple Drizzle:

in a small bowl place butterscotch chips and 1/2 tsp. shortening and microwave on high for 30 sec. If it has not melted in 30 seconds continue to heat at 15 second intervals. repeat with other chips. drizzle over cheesecake with a spoon.

Scrape sides of pan with a knife as soon as you get it out of the oven so the cake doesn't crack.
