Potato Casserole
This has been my go to recipe for years for an accompaniment to many meats like ham, roast pork or beef.
ingredients
- 1 large bag frozen shredded hash browns
- 1/4 cup + 2 T. butter
- 1 can cream of chicken soup
- 12 ounces sour cream
- 1/2 cup milk
- 1/2 cup onion, chopped
- 1 t. garlic powder
- salt and pepper to taste
- 2 cups grated cheddar cheese, divided
- 1 cup crushed corn flakes

1. Preheat oven to 350. Spray a large casserole dish with cooking spray.

2. Melt the butter in a saucepan reserving 2 T. for later.

3. In a large bowl combine the potatoes with the butter, soup, sour cream, milk, onion, garlic and salt and pepper. Add 1 cup cheese and mix all the ingredients well.

4. Pour mixture into your casserole dish. Top with remaining cheese, the crushed corn flakes, and then drizzle the remaining 2 T. butter on top. Bake in a 350 for 50-60 or until bubbly.
notes
You can cook this in a 375 oven. You could also add some fresh or dried herbs if you like.
